One week down in 2020! It seems to be a rough start all the way around between world news and on a much smaller scale, succumbing to my first head cold of the season. But as I have mentioned, it always feels nice to get back into a routine! So let’s keep on and get another week of meal planning in the works!
For this week, I went back to some of my favorite (celebrity-driven) cookbooks to gather up some of our tried and true recipes. It’s been a while since I whipped up most of these in the kitchen and I am excited to have them on the menu again!

Monday
Gwyneth Paltrow’s Chicken Taquitos. An easy recipe for easing into the week! My kids love these! And what I love about this recipe is that you can fill these tortillas with either chicken or with black beans. This would pass as a great appetizer and/or a perfect way to feed a crowd of kids.
Tuesday
Joanna Gaines’ Spinach, Mushroom & Swiss Cheese Quiche. Literally my favorite thing to make. So simple and so elegant. This is not the first time one of her quiches has made it on my meal plan so if you would like a more basic (but just as delicious!) version, click here.
Wednesday
Chrissy Teigen’s Hot Honey Chicken. Don’t let the list of ingredients prevent you from making this. So many of them are already in your spice drawer! And it is very easy to make! There is a little kick to it but it is so mouth-watering good!
Thursday
Artichoke Pesto & Burrata Pizza w/ Lemony Arugula. We made this over the break and it was so flavorful and delicious. I used an already store-bought frozen pizza crust! I also did not have fresh dill or basil on hand but the pizza seemed to be more than fine without it! The artichokes, olives, and lemon are the standouts here!
Sunday
Orecchiette with Sausage & Broccoli Rabe. This is one of those meals I always go to when I am stumped on what to make! The recipe calls for chicken sausage but my local grocery store (Mariano’s) has the BEST crumbled mild Italian sausage so I use that!
Salad of the Week
Arugula Salad. It is one of the most simple salads but it is packed with flavor. Adding a protein is always an option! And definitely make sure to use shaved parmesan cheese above all else!
Appetizer of the Week
Charcuterie Board. Maybe this would have been more fitting for the holidays but honestly, it is an easy, beautiful and plentiful appetizer to make for a crowd any time of year. I like this “How to Make” advice from Teigen of Half Baked Harvest!
