You know I love a good charcuterie board. When it comes to pleasing a crowd, nothing serves better in my mind. And because there are endless options when creating one, they are fun to serve time and time again.
Now most of the time when we think charcuterie, we are thinking of an assortment of cheeses, meats, fruits and accoutrements. But like with most great ideas, the concept of charcuterie has spilled over into so many other fares. From dessert boards to S’mores boards to deli boards, the possibilities are once again endless.
Earlier this month, I was hosting a gaggle of girls for Lollapalooza. After a weekend of eating on the run, all they wanted was some fresh food for dinner. Fresh veggies and protein seemed like a good idea. And presenting it on a board for their own (topping) choosing seemed like an even better one! So I decided to put together a Cobb salad charcuterie board. It was a huge hit! So much so that I wanted to share it with all of you. I think it is a great idea for a ladies luncheon or a light dinner with friends. It is a fun, different way to serve a weeknight dinner or a great side to bring to a dinner party. And while you can of course serve it with store bought ranch dressing, I highly suggest taking a couple of extra steps and making the dressing from scratch as shown below!
Cobb Salad Charcuterie Board
Ingredients:
- handful of asparagus spears, trimmed and cooked
- 3 heads baby romaine lettuce, halved or 1 romaine heart, cut up
- 12 oz. grilled chicken breast, sliced
- 6 hard-boiled eggs, halved or quartered
- 2 medium avoados, sliced
- 8 oz. hard cheese, such as white cheddar or parmesan, broken into chunks
- 1 small red onion, sliced
- 12 small radishes, halved or quartered
- 12 slices of bacon, cooked crisp and crumbled
- Homemade Creamy Buttermilk Ranch Dressing, (see recipe below)
Directions:
On a large board or platter, arrange asparagus, romaine, chicken, eggs, avocado, cheeses, radishes, onion and bacon. Serve with Homemade Creamy Buttermilk Ranch Dressing.
Homemade Creamy Buttermilk Ranch Dressing recipe
In a bowl, whisk together 1/2 cup each buttermilk and mayonnaise
Add 1 Tbsp. each chopped fresh parsley and chopped fresh chives
Add 1/4 tsp. each onion powder, dry mustard, salt and black pepper
Use 1 clove of garlic minced
Mix all together
If needed, thin with additional buttermilk, or add thickness with additional mayo. Cover and for chill 30 minutes.
