Compound Butters. Really just another way of saying butter flavored with other ingredients such as herbs, spices and zests! They are so simple to make but the results are beautiful. More importantly though, they are wonderful to have on hand for elevating the simplest of dishes. The potential flavor combinations are endless giving you the ability to dress up breads, pancakes, fish, grilled steak, and just about any vegetable!
Making Compound Butter
- Start with a stick of butter at room temperature. I use salted butter but if you want more control over the salt, especially with sweeter compound butters, then use an unsalted stick adding 1/2 tsp to start and then adjust to taste.
- Place in a bowl and either with a fork or a hand mixer, whip until fluffy
- Add in chosen ingredients
- Transfer the compound butter onto one side of wax paper
- Roll up the butter into the wax paper forming a cylinder tube
- Roll the wax paper in between your hands, until the butter forms a log.
- Twist ends to seal well.

Refrigerate at least 1 hour.

Slice into rounds and enjoy on steaks, vegetables or bread
Compound Butter Combinations
Honey Orange Butter
- A stick of butter
- 1 tablespoon honey
- 2 teaspoons finely grated orange zest
Uses:
- Spread on toast or cornbread
- Serve with warm scones or biscuits
- Serve with popovers
- Dollop on top of crepes
Smoked Paprika & Rosemary Butter
- A stick of butter
- 1 tablespoon minced fresh rosemary
- 1 teaspoon smoked paprika
Uses:
- On top of grilled chicken or steak
- Combine into sautéd shrimp
- Serve with grilled or boiled ears of corn
- Dollop on top of baked potatoes
- Brush on grilled vegetables
Lemon Dill Butter
- A stick of butter
- 1 teaspoon of chopped fresh dill
- Zest of 1 lemon
- 1 teaspoon of lemon juice
Uses:
- On top of fish or grilled steak
- Alongside steamed mussels
- Serve with steamed vegetable
- Toss with pasta or potatoes
Cinnamon Maple Butter
- A stick of butter
- 1 tablespoon pure maple syrup
- ¾ teaspoon ground cinnamon
Uses:
- On top of pancakes or waffles
- Serve with french toast
- Serve alongside fresh baked scones
Store in a fridge covered or rolled in parchment paper for up to one month. Compound butters can also be stored in a freezer.
